Carrot Salad Recipe

This recipe comes to us from Kelly Rose at ANZCO Foods Marlborough as part of our healthy recipe competition!

Ingredients:

  • 3 large carrots
  • 3 tablespoon goji berries
  • 2 tablespoon pumpkin seeds
  • 3 tablespoon sunflower seeds
  • Fresh mint
  • 1/3 cup coconut chips
  • 1/2 cup coconut milk
  • 1 tablespoon lime juice
  • Salt/Pepper to taste

Method

  1. Grate carrots using a cheese grater, and pop into a bowl
  2. Lightly toast the pumpkin and sunflower seeds and add them to the carrots
  3. Add coconut chips and goji berries
  4. Chop mint and add to salad
  5. To make the dressing, combine lime juice, coconut milk, and salt and pepper. Pour over the salad and mix.
