Carrot Salad Recipe

This recipe comes to us from Kelly Rose at ANZCO Foods Marlborough as part of our healthy recipe competition!
Ingredients:
- 3 large carrots
- 3 tablespoon goji berries
- 2 tablespoon pumpkin seeds
- 3 tablespoon sunflower seeds
- Fresh mint
- 1/3 cup coconut chips
- 1/2 cup coconut milk
- 1 tablespoon lime juice
- Salt/Pepper to taste
Method
- Grate carrots using a cheese grater, and pop into a bowl
- Lightly toast the pumpkin and sunflower seeds and add them to the carrots
- Add coconut chips and goji berries
- Chop mint and add to salad
- To make the dressing, combine lime juice, coconut milk, and salt and pepper. Pour over the salad and mix.
